Because 100% koji rice does not qualify as sake under tax law, sake is brewed with 96% koji rice and 4% rice. Therefore, the name of this sake is almost exclusively koji kamigase, which is the product name written in katakana.
It is a sake like a white wine with a good balance of flavor and acidity drawn from the koji.
Rice used: 100% Koshitanrei produced in Kashiwazaki, Niigata Prefecture
