Sake meter: +2 Acidity: 2.0 Available at: Uomoto (Azabu-cho, Kita-ku, Sapporo) Slightly apple-like top note. The same mild aroma, umami of rice, and modest sweetness as the topping, spread with soft acidity, a little alcohol spiciness, and a slight bitterness that quickly quiets down. It is a somewhat classical sake that is better served with a meal than as a stand-alone sake. It went well with a variety of nigiri (hand-rolled sushi).

Thanks for your comment, Jay & Nobby! I usually don't drink alcohol as I only eat sushi on a conveyor belt, but it's nice to eat while talking with the owner ✨I must drink some road sake once in a while😅.

Good evening Masaaki Sapporo 😃. I haven't tried Goshiki Saiun mashu yet, but it looks like it would go well with sushi and sashimi 🎵. I love that Goshiki Saiun is titled after the Kushiro region ✨.

8.5 points (Wife: 7.5 points) Rice used: 100% Kaijo-Shinko Rice Polishing Ratio: Koji rice 55%, Kake rice 60 Alcohol Content : 13% (Unpasteurized) Seller: Uomoto (Azabu-cho, Kita-ku, Sapporo) Slightly green apple and grape-like top notes The same soft aroma, gentle sweetness and umami as the topping, spreads with a mild grapefruit-like acidity, and then quickly quiets down while leaving a lingering sweetness and acidity. It is similar to the earlier Flax Cat, but the acidity is less pronounced and more balanced. It is elegant and tasty on its own, and goes well with meals. It went well with anglerfish and simmered conger eel.

It is more like a wine, with little sake flavor, but it is elegant and beautiful. It is delicious on its own, but can also be served with seafood. It went well with simmered abalone and sashimi.
