Slightly green apple and grape-like top notes
The same soft aroma, gentle sweetness and umami as the topping, spreads with a mild grapefruit-like acidity, and then quickly quiets down while leaving a lingering sweetness and acidity.
It is similar to the earlier Flax Cat, but the acidity is less pronounced and more balanced. It is elegant and tasty on its own, and goes well with meals.
It went well with anglerfish and simmered conger eel.
