It is relatively clean and dry, but has a strong taste. The aroma of rice is soft.
Inabatsuru Junmai Daiginjo
Fruity flavor of daiginjo. It is the cleanest of the three, but still has a strong flavor.
Hiokizakura Junmai Hiyadoroshi Yamasofu
Strong flavor. Aroma of maturity. More acidic than the others. Probably tastes better when heated. It is a bit like chocolate when paired with tofu chikuwa. Richness.

However, the squid and crab of Tottori come close to it. Together, they create a harmony of deliciousness. Good restaurant.
