The aroma is modest and elegant. Nuance of Japanese pear. It is sweet and sour, light, low in alcohol, and easy to drink. A sake to drink with aperitifs and salad appetizers. A few days after opening the bottle, you will start to get a sense of the pears that have been crammed into the bottle.
Kaze no Mori is usually No. 7 yeast, but this is Kanazawa yeast (Kyokai No. 14. Banana aroma. It ferments well at low temperatures with little acidity). It has a full-bodied sweetness. I think it goes better with western seasoning than soy sauce. Goes well with white fish carpaccio with olive oil and salt. ⭕️
I bought it because I wanted a nigori that I could drink smoothly.
The "snake" zodiac label was a kijo sake, so it had a sweet taste, but this normal label has a refreshingly acidic taste. The aroma is moderate and light, which I prefer.
