Harushika, Ichinokura, Gobashi, Kamoizumi
This year, we compared these drinks.
We are glad to have friends who enjoy the Risshun Asa Shibori with us every year.
All of them have a sweet aroma, and I think the sweetness and umami of each was: Kamoizumi > Gohashi > Harushika > Ichinokura.
I had the impression that Ichinokura was the lightest including the aroma.
I like Harushika for its strong aroma and flavor balance.
Immediately after the gorgeous melon-like aroma, there is a round rice sweetness. The sweetness quickly disappears, leaving a clean aftertaste. The acidity is moderate.
This is the kind of sake I always want to drink.
