Shinsei came to our house by chance in May.
The 10th bottle was a bit extravagant✨
100% Rikuu 132
Koji rice 55%, Kake rice 60% polished rice
Alcohol 13 degrees Celsius
Pale yellow color with a slight wine-like aroma.
Chilli and "sweet" taste.
It has a lingering aftertaste of sourness and bitterness.
Sweet and easy to drink even after opening.
On the second day, the aroma of ginger, which is one of the characteristics of this lot, is also present 🙄.
It also tastes like grape🍇 and has a very good balance of sweetness and acidity!
Day 3, still a little chili, sweetness has settled down and acidity has risen.
It tastes like grapes with a moderate sweetness.
Bitter, so it goes well with food.
On the 4th day, I bottled a small bottle to drink with lunch while going out. I had it with a Shizuya makunouchi sandwich 🥪.
The overall taste is more subdued, not as bright as the second day, but it wears well, and the acidity and bitterness go with many ingredients.
Like eating with a good white wine ♡.
