This is a sake brewed exclusively with Shonai rice by seven breweries in Shonai, available only at the Yamai warehouse in Sakata. I bought a bottle of Dewa no Sato (sake rice from Yamagata) from Tohokuizumi, which I had never heard of before. It's 55% shaved. The aroma of straw, similar to mountain waste, precedes it, and the taste is light and dry. The type that would go well with pure Japanese food.
