This junmai ginjo is made from 50% polished rice called "Watafune No. 2," which is the father of Yamada-Nishiki, a rice suitable for sake brewing. It is a sake that retains the original flavor of the rice while also pursuing cleanliness.
This luxurious junmai-ginjo sake is made from 50% junmai-daiginjo rice polished to the junmai-daiginjo standard of "Watafune No. 2 (commonly known as "short-stalked Watafune")," which is the father of Yamadanishiki, the king of sake rice.
It has a rich, powerful flavor and acidity that is well-balanced, which is the original taste of Watafune No. 2.
