The sushi is also available with Collage Banshu Aizan. The sweetness of Aizan is moderate, but the aroma is high and the lingering umami at the end is well-balanced, a truly good sake. We were able to drink DATESEVEN again this year. This is a collaboration product of seven Miyagi sake breweries that comes out during the Tanabata Festival in Miyagi Prefecture. This time, we compared the drinks, first the Katsuyama Style Orihime Bottle. It has a gentle taste. It has a gentle taste, but it is also clear and gorgeous, and combined with the beauty of the bottle, it makes you feel good. We enjoyed it with red sea urchins from Yawatahama, Ehime! Rice used: "Yamadanishiki" from Hyogo Prefecture Polishing: 45%. Alcohol content: 16%.

First visit to Kyoku, an upscale restaurant at Shiogama Port, a conveyor-belt sushi restaurant in Miyagi Prefecture. Since my companion did not show up, I decided to have a drink in the meantime. This sake was entered in the 2023 National New Sake Competition. It is gorgeous and has a fine sweetness. Atago no matsu, amazing.
