Wooden bucket brewing Junmai Daiginjo Imadaiji Most of the sake breweries are now shifting to thermal tanks, which are easier to control the temperature, and as a result, the number of sake brewers making wooden vats is decreasing, and wooden vats are becoming less and less popular. Imadaiji is the only sake brewery in Niigata Prefecture that still uses wooden vats. In order to get closer to the original form of sake, Imadaiji is working on wooden vat brewing and all pure rice sake. The taste is soft and deep. It is light and dry with a gentle sweetness and a mild umami taste. The aroma of the wood is not strong because it is made in a wooden vat, but it is there in a subdued, clear and beautiful way. It is very good. The wood grain design of the bottle is also soft and gentle. === Ingredients: Rice (domestic), Rice malt (domestic) Raw Rice: Gohyakumangoku (rice produced in Niigata Prefecture) Rice polishing ratio: 50 Alcohol content: 15 degrees Chilled, room temperature 720ml 2,640yen === ★★★★☆

Nishikigoi Imadaiji is not "Kingyosyu" but a majestic "Nishikigoi". Even in the days when such sake was rampant, Imadaiji did not dilute it and shipped it. I took a tour of Imadaiji's brewery. The brewery uses 100% natural water from Suganadake, a famous brand of water in Niigata. Imayo Tsukasa is a sake brewery that also has products made in wooden vats, which is rare in Japan. It is close to Niigata Station, and you can walk there and have a paid tasting of about 20 kinds for 1,000 yen. The design of the Nishikigoi carp is highly regarded. The water tank in the photo is a display in the tasting room at Imadaiji. Submerged. It's beautiful, but I don't want to drink it! I'm sorry, it's not a picture that I want to drink. It has a fresh aroma, softness and sweetness. It has a clean, gentle, elegant and mellow flavor. It's delicious, and it would certainly make a great luxury gift. === Ingredients:Rice(Domestic),Rice malt(Domestic) Raw material rice:Niigata rice Rice polishing ratio:-%. Good morning, Haruei Chichi! Numadaru, it's a sacred place for railways! I didn't know that! There are so many place names I can't read! Sweat. It's a beautiful building, and the staff were cheerful and easy going! I want to go there again in winter!

Good morning, Kincatoma-san. I heard that Imadaiji-san has a sake brewery tour. I think I'll go during GW... I have a Niigata license plate, so I won't be stabbed in the back...

The 30th was a weekday, so there were no people there, so I was able to taste the wine slowly and without worrying about being crowded! Maybe it's a hole in the wall!

Imadaishi, you are very particular. It's also expensive. When I visited the brewery once, I bought a bottle of sake called "Fuku (blow) Sakedaruma"? I bought it as a wish for my daughter's advancement to the next grade.

Gonyi-Go-san, Fuku-Sake, champagne-like raw sake, I'm curious...! It's a bit expensive, but there's some good sake here. Please be careful when you go out!
