Nishikigoi
Imadaiji is not "Kingyosyu" but a majestic "Nishikigoi".
Even in the days when such sake was rampant, Imadaiji did not dilute it and shipped it.
I took a tour of Imadaiji's brewery.
The brewery uses 100% natural water from Suganadake, a famous brand of water in Niigata. Imayo Tsukasa is a sake brewery that also has products made in wooden vats, which is rare in Japan.
It is close to Niigata Station, and you can walk there and have a paid tasting of about 20 kinds for 1,000 yen.
The design of the Nishikigoi carp is highly regarded. The water tank in the photo is a display in the tasting room at Imadaiji. Submerged. It's beautiful, but I don't want to drink it! I'm sorry, it's not a picture that I want to drink.
It has a fresh aroma, softness and sweetness.
It has a clean, gentle, elegant and mellow flavor.
It's delicious, and it would certainly make a great luxury gift.
