Most of the sake breweries are now shifting to thermal tanks, which are easier to control the temperature, and as a result, the number of sake brewers making wooden vats is decreasing, and wooden vats are becoming less and less popular. Imadaiji is the only sake brewery in Niigata Prefecture that still uses wooden vats.
In order to get closer to the original form of sake, Imadaiji is working on wooden vat brewing and all pure rice sake.
The taste is soft and deep.
It is light and dry with a gentle sweetness and a mild umami taste.
The aroma of the wood is not strong because it is made in a wooden vat, but it is there in a subdued, clear and beautiful way.
It is very good.
The wood grain design of the bottle is also soft and gentle.
