Its production uses water from a mountain spring located near the ruins of an ancient fortress. It is believed that the water from the spring has a miraculous power. After fermentation at low temperatures, Kaiun Tokubetsu Junmai sake is aged in steel enameled vats for 6 months. Tokubetsu Junmai is special, with a higher degree of rice grinding.
