Polishing ratio 40 ゆきだるまTenkaeru: It is said to be a raw sake with strong effervescence from secondary fermentation in the bottle! They are going to move to a "clear" type with clarification and sterilization process in the next few years.
So, the unexpected over-fermentation will be the last we will see of it.
I am grateful for the miracle of encountering it.
