GuoKuiSuch a unique find here in Australia. A bodaimoto nigori from Okayama. Rice aromas surrounded by a yoghurt lactic edge underlying with some fruit characteristics. Creamy, fruity with loads of peppery spice. Such a delight!
GuoKuiMy first foray into Yamamoto Shuzo. Immediately blown away by the initial aroma, so much bright red fruit backed up by a sweet rice note. The nose didn’t deceive as those red fruit notes and an almost wild strawberry note overpower into a sweet and acid driven finish, a slight spritz and pop from being bottled with some CO2. Are these red fruit notes a by product on using white koji-kin?
