Seikagami's first draft sake
The mouthfeel is smooth. You can taste the umami of the rice. The alcohol taste is strong at the end. Depending on the food it is served with, it can be quite spicy.
When it gets close to room temperature, the sweetness comes out and it is delicious.
1901 yeast is said to produce a lot of ethyl caproate, but it was not very capricious.

It has a light aged feel to it. Sweet and sour, sweeter and easier to drink than I expected. Surprising because I thought it would be more classic and peculiar.
