Seikagami's first draft sake
The mouthfeel is smooth. You can taste the umami of the rice. The alcohol taste is strong at the end. Depending on the food it is served with, it can be quite spicy.
When it gets close to room temperature, the sweetness comes out and it is delicious.
1901 yeast is said to produce a lot of ethyl caproate, but it was not very capricious.
It's been over a week since I opened it and it's sweeter even when it's not at room temperature. I prefer it over freshly opened.

Good morning brother bouken, I was wondering about this drink. I've never had Seikagami and using 1901 is good. I thought it would be fruity and spicy 🤔.

I think it's because it's a low-polished wine, it's not fruity and the slight caproic acidity was a nice refreshing accent 😋I personally found it easier to drink if it wasn't too cold because it was sweeter 🤔.
