I've seen the concept of sake matured in wine barrels a few times, but this was my first time to taste it.
I'm sure you'll be surprised at how much the aroma changes just by using a different place to age the wine🤯There's the aroma of the barrels in the nose, and of course there's the sweet and sour aroma of white wine reminiscent of Niagara, which should not be present in the sake itself, because the barrels were used to make wine.
In addition, it has a mellow aroma reminiscent of old wine because it has been aged, and I felt that it was an aged wine with a strong flavor like Shaoxing wine.
I personally prefer sake aged in wine barrels to sake brewed with wine yeast🍷.
I visited Toyama for the first time to celebrate my brother's wedding.
I wanted to visit Masuda Shuzo's brewery, but they didn't accept us because it was the off-season, so we went to "Saiseki", a sake bar under the direct management of the brewery, to compare the drinks☺️.
This is an unfiltered unpasteurized sake only available at Saiseki. The aroma is a gentle ginjo aroma, and although it is only 17% alcohol, it is fruity like a green apple and has an elegant sweetness. There is no miscellaneous taste and it is elegant.
You can't help but simply say, "Delicious! It was a sake that made me simply say, "Delicious! When I think of the Toji people drinking this freshly pressed sake and feeling how good or bad it is, it makes me feel very special😊.
