Niseko Sake Brewery in Kutchan, Hokkaido, was founded in 1916 and is a sake brewery that focuses on "unadulterated sake", "water", "air", and "environment". The water used is fresh snow water from the Niseko Weiss Mountains and "spouting spring water" from Mt. This junmai ginjo sake is brewed with 55% polished "Comet" rice produced and harvested in Imagane-cho, Hokkaido, and with water from the Goshi-Ribetsu River, the clearest underground water source in Japan. Since there is no sake brewery in Imagane Town, the sake was commissioned to the Niseko Brewery in Kutchan Town, which is the nearest town to Imagane Town.

Another face of Sentori, Classic Sentori, is the counterpart of Modern Sentori. It surpasses the Modern series in terms of stability and wide compatibility with food. Mukonin" is the standard of the Classic series.
Mukun" means "pure," meaning that there are no impurities such as gold or silver, and that it is simple. The gold and silver in Senkyoku are Kamenoo, Omachi, and Yamadanishiki, while the simple standard is mukonin. Despite the simplicity of the standard, we use Yamada-Nishiki grown in the same water system as the brewery's brewing water, and we use the "Namahashime Kimoto" method of brewing, which means that we take great care with the ingredients and the time and effort. It has a light, fresh fruity aroma. It is reminiscent of muscat and green banana.
