まつちよI bought a bottle of dry Funaka Hachisaku at my father's request.
I opened it on New Year's Day.
The top aroma is mild, but it has a refreshing sweet aroma with a hint of acidity.
When you put it in your mouth, the alcohol hits you for a moment, but you feel a moderate sweetness and a hint of refreshing sourness like citric acidity, probably from the use of white malted rice, and it finishes cleanly.
Although it is labeled as "very dry," it is not so much sharp as it is refreshing, and the refreshing acidity makes it very light and refreshing.
You can drink it in large gulps.

Your last spurt was awesome 😂. まつちよMy father, who doesn't like very dry sake, was influenced by the morning drama and wanted to drink Tsukibotan, so I thought this sake made with CEL-24 would be okay 😅.
The first aroma is sweet and fruity.
In the mouth, it has a refreshing sweetness with good acidity and sweet and sour taste, but it soon finishes with a light bitterness.
The label on the back of the bottle says that the bitterness is typical of "Shibotan, which believes in light and dry taste".
As someone else wrote, I felt that CEL-24's strengths were not fully utilized, but I hope that they will take on various challenges and produce delicious sake.
By the way, when I asked my father what he thought of it, he said he didn't really know 🤣(maybe it wasn't good enough).
(Postscript) When I drank the remainder two days later, the bitterness disappeared and it became a refreshingly sweet sake. It was also very sharp and tasty 🍶. まつちよAs the label on the back of the bottle says, it has a rich, rich, caramel-like sweetness and aroma with a good balance of acidity from the Yamahai.
It's just so good.
I would like you to try it unless you are a person who says that only light and dry sake is good enough for you.
