It has a complex and pleasant taste with a touch of sweetness on the palate, followed by a touch of sourness. It tastes like young muscat.
We enjoyed it with oden. こるね<Soft, dry, acidic, delicious, classic.
The aroma is pleasant with the flavor of rice. It is like a classic dry wine.
The mouthfeel is also full of classic acidity. Then, the umami gradually comes through. Then, the rich aroma of alcohol is pleasant. The aftertaste has a gentle and beautiful umami bitterness, and then it disappears.
It is a classic dry wine without much sweetness, but with a classic acidity and umami. It is a very soft and gentle sake, even though it has a strong acidity and umami. It is very calming.
If I were to use a Ghibli analogy, it would be Kinu-san from "The Wind Rises. She is the maid who is beaten by the main character Jiro in the scene of the Great Kanto Earthquake in the beginning of the movie. She is a beautiful woman with a gentle demeanor who looks good in kimono.

こるねThis is a sake with a feeling of spring in the snow.
The aroma is slightly banana.
In the mouth, the first thing that sprouts out is a discreet but refreshing sweetness. After that, as the buds grow, a sweetness, alcohol, and a slight bitterness and sourness are gradually released. It spreads.
Somehow, this was a drink that made me happy because I felt like something good was coming afterwards.
If I were to compare it to Ghibli, it would be the last cut of "Nausicaa of the Valley of the Wind". It's like a plant sprouting up at the bottom of a rotten sea, and it's a foretaste of the future. The manga version drawn after the movie is a completely different last cut, though.
Satisfaction Level: ★★★★ . こるねSpecial Junmai with a delightful change of taste.
As soon as you put it in your mouth, it's fruity, sweet and sour. But it quickly recedes, and then the deliciousness and bitterness comes out this time. There's also a nice rumplish hint that passes through the nose here. It cuts off at the end, leaving the bitterness behind. The change in flavor was fun and delicious.
A Ghibli analogy would be that of Shokichi, the main character in "Heisei raccoon dogfight Ponpoko". Raccoon dogs look good in the moon and in the mountains. And they change, too. He is an optimistic character with a fondness for people. But in the end, he leaves a bitter taste in his mouth.
