Kaoru Sake. This sake has a strong sweet, sour and bitter taste, like a lactic acid drink. It's sweet and tastes great on its own.

Alcohol content: 15.5%. Rice used:Undisclosed Rice polishing ratio:65 This is the first time to drink this brand. The label also mentions a lot of sourness, and indeed it is very sour. Since white malted rice is used, the acidity derived from citric acidity feels like juice. It may be close to the nuance of white wine. It seems to go well with oysters and other seafood.

Mellow sake. It is the most acidic of all the Hymenoys I've had so far! Mild on the palate, but with a sour aftertaste, it tastes like some kind of adult juice. It was a perfect match for the soy-sweetened yam!

Kaoru-shu. 2nd time I have had Himenoi! It has a sweet and sour taste like yogurt, and the taste is more robust than the last time I drank it, is it because of the cage? I like this strain.
