Timeline

ststI bought it because I was intrigued by the fact that it was freshly squeezed and aged for 2 years... 👍
I'm just curious to see if it still has the "freshly squeezed" feel after aging!
When I opened the bottle and poured it, the aroma was of mushrooms and magic ink. It doesn't smell like old sake, but the aroma suggests that it has matured well.
The mouthfeel is surprisingly smooth and light. The moist sweetness and tea-leaf-like overtone are reminiscent of jasmine tea.
It also has a lactic acidity, which is a bit similar to the "Okura DOLCE" and mizu-hashimoto type of sake that we had before.
When paired with cheese, it tastes like vanilla ice cream, which is bliss 🤤.
It's an interesting cup with a flavor that is a combination of the best parts of both mature and new sake.
I'm looking forward to changing the taste of this on a daily basis ✨. ポンちゃんHi stst, ☀️
I'm very interested in reading about this sake, it's very interesting 😄👍I wonder what it's like to have both juku sake and new sake present 🤔. ststGood evening, Pon-chan!
The main part of this wine has a mature sake feel, but the freshness and gorgeousness of the new sake is still there as a remnant in the flavor 👍.
It's like the ripe sake around the flavor and the new sake in the center... 🧐.
ststToday with my family 🍶.
When you open the bottle and pour it, the aroma is both freshly pressed and elegantly sweet. It has a standing aroma of pears and green apples👍.
The mouthfeel is crisp, but a moist sweetness covers the entire palate.
Not only is it smooth and easy to drink, but it also has a bright pear-like flavor, making it a very satisfying drink!
And then the chili dryness comes later and finishes with a dry throat ✨.
I was actually involved in the making of this sake. It's really a deeply moving drink 😌. ひるぺこHappy New Year, stst 🎍🐇It's a great New Year to share a cup of sake brewed by yourself with your family. Thanks for all your hard work 😊. 寿梨庵Happy New Year, stst 🎍!
It's wonderful to celebrate New Year's with sake that you were involved in ✨.
I visited your brewery a few times when I was in Yamanashi for brewery openings and I miss it very much 😊. ststHappy New Year, Hirupeko! My parents don't usually drink much, which made it an even more special moment than usual✨.
I look forward to working with you again this year! ststHappy New Year, Jurian!
I never thought I would have a connection between Yamanashi and the brewery, and I'm surprised 😳.
I look forward to working with you again this year! ststYesterday was the last day of work and I went out for a drink! I drank "Daiyubachi" and "Yukikai-ryu," but I was completely drunk and refreshed, so I'll spare you my impressions 🙇.
I was completely drunk and felt like crap so I'll spare you my impressions Sake such as this year's "Shiboritate" which I was involved in making. I will enjoy them with my family at my parents' house...!
ststI was out drinking today!
It was probably one of the best drinks I've ever had, but I was pleasantly drunk and had a great time talking to people👍.
I'll try my best until the end of the year with a fresh start...! ststToday, we went for a drink with the brewery staff at the washout!
The brewing process is about to begin. We will do our best 👍
ststToday we went to a drinking party with the brewery staff!
Daiginjo, hiyaoroshi, assemblage.... I'm going through them before I can even think about how I feel about them, but I can't resist ✨. ststCame here today for a drink!
The deep flavor that is typical of Junmai with a banana feel even in addition to the smoothness derived from the water from Mt. Delicious as always! ststA friend came to visit today and we had an extra glass 🍶.
It's mellow on the palate, but the water from Mt. Fuji makes it smooth and easy to drink!
Unlike most junmai sake, this is a nama-shu, so it has a freshness to it and a bit of a roughness in the sweetness that makes it seem peachy 🍑.
It leaves a soft sweetness behind that lingers like vanilla ice cream!
The party is just beginning~!

ststMy first day at work and the welcome party went off without a hitch, so I was back at my parents' place for the three-day weekend.
I bought a limited edition label souvenir along with a Shingen mochi (rice cake). I decided to drink it while offering it at the Buddhist altar.
When I opened the bottle and poured it, it had a full Junmai-like aroma. It has a full-bodied aroma with a hint of sweetness.
The mouthfeel is refreshing. The palate is clean, yet the sweetness and umami of Junmai, which is similar to custard cream, can be felt well. And there is an astringent taste in the sweetness that adds a nice accent!
After drinking the peace water, I drank it again, and I could taste the mushroom-like flavor from the back of the bottle.
In the latter half of the bottle, a pungent spiciness comes out, and the lightness from the water from Mt.
I think it is good to go to a hot spring on a holiday...these days. Personally, I want to go back to the radon hot spring in Ryuoh♨️. うまいうまいGood evening, stst!
I'm moeing the label 😻 So, Ryuoh is in Shiga? Are you familiar with Kansai? ststGood evening, mamai mamai!
I'm from Yamanashi, Ryuoh, and there is actually a radon hot spring called Radon Onsen that won first place in the hot spring general election✨.
I go to Kansai sometimes to visit historical sites, so I'm there. I'd love to learn more about it...! ststFinally, tomorrow I start work at my new job. I can't wait to see how my life will turn out✨.
So today I'm full of energy....
When you open the bottle, it smells like coffee or café au lait.
The mouthfeel is smooth & mellow. It's sweet and full-bodied, like drinking coffee milk!
The taste is stable throughout, but after a while, the tangy pungency of brewer's alcohol comes out.
And the sake itself is smooth and silky, so despite the flavor, it flows surprisingly easily👍.
If the weather is clear, it would be nice to enjoy a cup of sake with a view of Mt. Fuji... I will continue on the same path as my ancestors!
ポンちゃんHi stst 😊
It's finally happening! Sake is also opening up, good luck ⤴️⤴️I'm rooting for you, good luck 😄 RecommendedContentsSectionView.title
