Ibaraki Aeon (the former Saty & Bible Aeon, not the Hankyu Aeon) is a big fan of Nakao Sake Brewery, so I bought this one, which looked rare and had a lot of different kinds of sake.
The price is quite expensive (2,500 yen), but I guess it can't be helped since it is produced in small quantities 🤔.
They are not a member of the sake brewers association.
The description is too vague, but according to the official website, it is made with in-house yeast, 56% polished rice, and Mishima Omachi produced in Ibaraki City, just like the regular Miyama Nama Sake. It is not clear if it is a draft or not, but it says it needs to be kept cool. I can't tell if it's raw or fire-brewed 😅.
I wonder what they do with the brewing water, since the brewery was located in downtown Ibaraki until 10 years ago and they used hard water from a well.
It has an apple-like aroma. It has a slightly fruity aroma and is quite spicy, but the sweetness and alcoholiness are in balance. It is the best sake I have ever tasted from this brewery. It's spicy, but it's hard to believe that it has a Sake meter rating of +8!
I've avoided this sake a bit in the past because it had off-flavors in both of the two sakes I've bought from here...
I think the content of the bottle is smaller than other sakes for 720ml if you look closely 🤔.
It's really good with soda 😋.

There should be a rule of notation set by the IRS, but there is no penalty for not following the rule, so I guess they don't know about it 🤔.
I don't really care about the specific name sake or the rice polishing ratio, but as with other breweries, I would like to see a clear indication of whether the sake is raw or fire-brewed 😅.
