Today is the 3rd anniversary of Sake-no-wa: ㊗️
I started Sake-no-wa to make sake a hobby, and I have had the opportunity to interact with everyone, connect with Kansai Sake-no-wa members in real life, and much more ☺️
We are starting our 4th year with our 40th anniversary Kirizukuba sake brewed by our most popular brewer, Chikara Urasato 😊.
Appearance and aroma📝.
The appearance is clear crystal with an almost transparent shine.
The aroma is mild and chaste sweetness.
Aromas of ripe green melon, white grapes, young peach and banana.
White floral notes and a distant coolness of chervil.
The rice aroma is clean and about the size of a topknot.
Taste 📝.
Very soft and smooth texture, as if covered with fluffy silk.
The moderately intense sweetness, which is as clear as a clear stream, spreads naturally as if it blends in, and the acidity is very gentle.
From there, the soft and rich umami of the rice blossoms and finishes with a clear and clean umami bitterness that reminds one of the richness of Yamada-Nishiki.
The aftertaste is very long and beautiful, as if a line is quickly drawn on a white canvas.
This is a drop that crystallizes the essence of Kirizukuba's traditions and techniques, which have been spun over four generations of toji since 1985.
