It was sold at a very low price, in the 600 yen range, at a business supermarket that is strong in Japanese sake.
Junmai was in the 500 yen range.
I was able to purchase it with information from Aladdin🙏.
Symphony Yoshida Sake Brewery didn't show up, so I registered at Yoshida Sake Brewery...
Symphony Yoshida Shuzo is a joint venture between Yoshida Shuzo of Eiheiji Hakuryu and a Hong Kong company, Symphony
This brewery is supposed to make relatively high-priced sake for export 😅...
It's sweet and sour, with a bit of spiciness coming along with the sourness in the second half. It's quite a unique sake.
Citrus sweetness and sourness
I wonder if this is a one time fire-brewed sake. It is a little different from the fire-brewed sake sold in supermarkets. Maybe it's unfiltered or undiluted.
It's somewhere between modern and classic.
The taste is great for the price, but there must be some special circumstances 🤔.
It's like a dry white wine, but I wonder if that's the quality of the wine since they are making it for export.
I think I like this one a lot.
It's getting a little bit peculiar after a few days...
It has a bitter and nutty flavor, and a little bit like a lactic acid bacteria drink.
It's been 9 days since I opened the bottle, but I think the nutty taste is lessened and the sweet taste is increased 🤔.

Is it a Chikuma-Nishiki pattern of Donki or did they have a surplus of sake and it just flowed in?
Either way, it must be an irregular sake 🤔.

It was sold at a supermarket for 500 yen. The label says that it is made by Symphony Yoshida Brewery, a joint venture between Symphony Brewery of Hong Kong and Yoshida Brewery of Hakuryu. The sake is apparently made for export, but why in a Japanese supermarket? It was a delicious sake with a strong acidity and a good rice flavor. I felt special to be able to drink such a sake at such a low price.
