The Kanmei Sake Brewery, located in Kuki City, is the originator of Kanmei, the first company to make Kanmei sake.

The taste is not spectacular, but rather orthodox, well-balanced, and royalty-free. It has a very orthodox and well-balanced taste.
The toji, Takahiro Suzuki, is young and of the same generation as Toyoake's toji. He made a sake called "Suzuki" for Mr. Suzuki on Kurafan.
The owner of a liquor store that Mr. Bouken patronizes came by here, so I forced him to drink Toyoake and asked him to stock it for me. We exchanged business cards, and he said he would visit the brewery again, so please do so 🙏.

Chichibu Nishiki is the same, and this place was also founded by an Omi merchant. Seibu is also an Omi merchant, right?
According to information from Sakegawa, they seem to be a one-operator sake brewery.
When I search, only Miyakanbai comes up, and there is almost no information about this brewery. Their instagram isn't updated and their website is gone...

Surprisingly good 😋, deliciously juicy.
Well-balanced and gently sweet. It's a versatile type of sake that can be enjoyed on its own or with food.
As was the case at the other booths, when I looked at Mr. Umai, he was always talking to someone. He talks like he knows me but I don't know him 🤔.

A sake from my hometown in Saitama Prefecture, because it was a good opportunity. When I asked about it, I was told that it is brewed in a one-operation operation 🧐Carme-yaki style smell. Complex. Acid and sweetness are fighting each other. My wife didn't seem to like it much. It was softened when paired with myoga (pickled myoga on kombu seaweed).
The list of yeast is also made by the owner. I'm learning a lot 🤔.
