First encounter a brand from Nagano, being recommend by a friend, (Cindy San) from Nagano. A brewery that makes more of a Junmai class sake. This kinmon Nishiki, uses soft water 💦 to make its brew. Super drinkble, soft aroma, when down a choko, it glides down your throat. Without any resistance (Sibarashi). The sake that I drink, is also a sake that I sell.
