ことりIt is a junmai sake that is slowly fermented at low temperatures during the harsh winter season, which is the most suitable time for sake brewing.
It has a slightly classical caramel-like flavor, soft on the palate with a hint of sweetness that gives the impression of a medium-bodied sake. The nose has a slightly tamari soy sauce flavor. It is a crisp sake with the full flavor and richness of rice spreading in the mouth, accented by an astringent taste. It went well with the umami of mushroom tempura.
We were recommended to warm it up to 40-50°C, so we warmed half of it up. The sense of maturity was lessened and the sweetness became more pronounced, making it softer and smoother on the palate and down the throat. It went well with the sweet and spicy cooked chicken, and was very easy to enjoy.

With the map painted on my mind, I found a mini-bottle of this sake at the supermarket, so I decided to have it with the seafood rolls I bought with it.
I decided to drink it cold.
It has a smooth and mild taste.

The more you drink, the more the moderate richness and umami spreads 🤤.
The roughness felt in the slightly dry flavor of the alsobe is also a nice touch. The aroma is in harmony with the umami,
It also goes down the throat well and is easy to drink.

Alcohol content: 15-16%. ことりWanting to eat something refreshing, I visited the food corner of a supermarket. I picked up a takeout of "Kitakushimenzame sardine nigiri" (vinegared sardine). It looks high in fat, but the vinegar effect of the sardine makes it refreshing.
Patrolling the sake shelf, I found some Ehime sake that I had not yet tasted! It's the height of summer 🥵 but I've seen a cherry blossom patterned cup of sake, Sakura Uzumaki 🌸🎶(*´Itsuki`*)♡Kawaii!
Sakura Uzumaki Tensho one-cup (regular sake), made using traditional methods to bring out the full flavor of the rice.
Well, the taste... it has a pleasant mouthfeel, a soft ripe aroma with a hint of dried fruits like apricots and raisins, a gentle acidity, and a sweet and moderate umami. It seemed to have a robust flavor.
