It has a sub name of PROTOTYPE 2023. It is sour, bitter and spicy. It seems a little heavy. In western Japan, there are many spicy and zesty sakes around Shimane.

It has a refreshing aroma. It has a crisp and refreshing taste. The soft water from Izumo and the wooden tank pressing of Chika Nishiki make this sake refreshing, dry and refreshing. Shimane Prefecture has a long history, and perhaps a more mellow sake would have been better. I'd like to try the best of the Daiginjo next.
