The Nichinichi, which I drank earlier, is more mellow and the Tenpyo from Nichinichi is more transparent. The characteristics of each are easy to understand.
You can't tell these things when drinking at home. sikamaruI like Yamada-Nishiki the best for Nichinichi. It has a great sense of unity as a sake. It is mellow and gently sweet. It finishes with a refreshing aftertaste, so there is no unnecessary complexity, and its simplicity makes it perfect with food. Since this is a low-alcohol sake, it is the strongest food sake.
