First brand. Hakuin Masamune. As you can see from the impression on the label, it has a full mouthfeel with a taste of rice. There is no sweetness, and the impression is of a well-honed flavor. I would never have been able to choose such a sake on my own, so I am grateful that I was able to encounter it.

Sushi at a year-end party. After beer, Hinichi's Yamadanishiki. The fresh and clear flavor is very impressive, and although it is not sharp, it does not interfere with the food in the first place. The balance of sweetness, umami, and acidity is good, of course, but this transparency is a bit surprising. This may be the best place in Japan to enjoy drinking nichinichi.

The overall flavor is clean and clearly defined. The umami and sweetness come through clearly, but it is not heavy or cloying. The Nichinichi, which I drank earlier, is more mellow and the Tenpyo from Nichinichi is more transparent. The characteristics of each are easy to understand. You can't tell these things when drinking at home.

I like Yamada-Nishiki the best for Nichinichi. It has a great sense of unity as a sake. It is mellow and gently sweet. It finishes with a refreshing aftertaste, so there is no unnecessary complexity, and its simplicity makes it perfect with food. Since this is a low-alcohol sake, it is the strongest food sake.
