I was very impressed with the "hinabeji," a shabu shabu shabu pot using charcoal that has been available only at the Ginza branch since the establishment of the restaurant. Binchotan charcoal is placed in a hole in the middle of the pot to heat the pot and keep the water around it boiling, creating steam in the room 😳😳. The accompanying Jungin of Shimehari Tsuru was also a nice richness and matched the flavor of the meat 😁. It matched the flavor of the meat 😁😁😁.
