I was surprised at the change in taste of Hakutsuru's fresh stored sake last time, so I bought another bottle of the fresh sake and drank it over a week to enjoy the change in taste.
On the first day when the lid came off, there was a strong sense of gas and a crisp carbonation on the tongue. The sweetness came later, but the carbonation was stronger. 2-4 days, the sweetness increased and I liked it this much, it tasted like a cocktail with round sweetness like an apple and no taste of highly concentrated alcohol. 5 days later, it was even sweeter and there was no change in taste.
If you buy a bottle (720ml) in Canada, the average price is about 6,000 yen.
