Hakutsuru-Nishiki" is a new sake rice produced by Hakutsuru Shuzo, a famous brewery in Nada, which was created by crossing "Yamadaho" and "Watabune" over a period of nearly 10 years since 1995. It is positioned as a sibling variety of Yamadanishiki. This Junmai Daiginjo-shu is made from "Hakutsuru-Nishiki" produced in Hyogo Prefecture, flat polished to 50%, and brewed with in-house yeast.
