Hakutsuru-Nishiki" is a new sake rice produced by Hakutsuru Shuzo, a famous brewery in Nada, which was created by crossing "Yamadaho" and "Watabune" over a period of nearly 10 years since 1995. It is positioned as a sibling variety of Yamadanishiki. This Junmai Daiginjo-shu is made from "Hakutsuru-Nishiki" produced in Hyogo Prefecture, flat polished to 50%, and brewed with in-house yeast. The first sip reveals a beautiful muscat aroma, which is quickly followed by an elegant sweet aroma similar to that of white peaches. At first, it has a gentle umami flavor that seems sweet at first, but later changes to a dry and smooth texture. It is a beautiful and gentle ultimate food sake that will heal your body after a long day in the summer heat without making you tired.
