I wasn't aware that I was supposed to check in at 100 🎉 on the last day of GW, but I reached a milestone with the Kaze no Mori ALPHA series that got me back into the sake swamp: ☺️
The bottle opens with a pop and a cheerful welcome 💨The gasiness seems to be alive and well even with No. 6 yeast 🫧The nose is mild, with a little lactic acidity and citrus 🍊.
The top nose is mild with a bit of lactic acidity and citrus , the mouthfeel is soft and viscous with sweetness and a hint of gas 😋, and the acidity is refreshing 🤤 I wonder, the acidity gives it a great depth ✨White yeast or Bodai yeast 🤔, a bitterness at the end and a clean finish with no alcohol 🥰, as expected from a collaboration between Shinsei and Kaze no Mori 😆. It's a shame it's only 500ml 🍶.
