Except for nigori sake and daiginjo, all of the sake rice used this time is Takananishiki. Not Akita's Kikusui, not Niigata's Kikusui, but Nagano's Kikusui, a brewery with 80% local consumption.
Junmai Kazakoshi
The standard sake of the brewery. It has an unrefined, rustic feel to it, but it has a nice umami flavor.

Junmai Ginjyo Hatsuho Shizuku Nama-no-Genshu
The rice is Takananishiki.
According to the official website, it has a Sake meter of -7 and an acidity of 1.6.
I wonder if this is a different product from the sake I bought at last year's traveling SAKE event, since only the Takananishiki label is different. The sake level is also totally different.

The rice is Takananishiki. It has a slight gasiness.
The top aroma is gorgeous, but the sweetness is moderate and a little dry. The lingering aroma is pineapple.

Kikusui seems to be the brewery that revived Takananishiki, a rice suitable for sake brewing.
Kikusui Junmai Haru Hitohira

A nigori type of Tenryu. Creamy and a little sweet. The final taste is bitter and cohesive.
There are many brands and they seem to be scattered all over the place, so they are going to brand and consolidate them eventually.
