Kunifutsuru from the revived brewery, which was personally obtained by the store owner.
Noguchi Sake Brewery quit brewing its own sake 40 years ago due to deteriorating water quality and housing development.
Initially, the brewery outsourced to Watanabe Sake Brewery in Musashimurayama, but the business was closed in 2007, so it appears that the brewery has since outsourced to a relative's brewery in Nagano.
During the time when they were not brewing, they were still adding water and bottling their own sake.
When they reopened the brewery, they dug a new well to secure high-quality brewing water.
The toji (master brewer) used to be a master brewer at a brewery famous for its flower yeast in Saga.

Kunifutsuru Junmai
I think it's a moderate, food-friendly type.
It's like muscat and has a little bit of 4MP.
Kunifutsuru Dry Junmai
It is not so dry as to be called "dry", but tastes good with a strong flavor. I think I prefer the dry Junmai to the first Junmai I had.
Both have a 65% milling ratio and the rice is of an unknown variety, but it is said to be grown in Tokyo.
They are only distributed in Fuchu this season, so it was nice to try these rare sakes. ひるぺこHello, bouken-san. This is the first time I have heard of Kunifutsuru, and it is only because you know the history of this sake that you were able to taste it, bouken-san. Soft and gentle aroma. Like a wafer.
It is very mellow and contains a faint fruit-like acidity. Onshu Mikan🍊
