I found an unfamiliar brand. Moreover, it is an active nigori.
I am a sake pervert who obsessively searches and collects liquor stores in search of active nigori. Of course, this sake also fell prey to this pervert.
Opening the bottle took quite a bit of time. When the bubbles settled down and I loosened the cork thinking it was safe to drink, the bubbles would suddenly come back up again. I repeated this over and over again, but it didn't help, so I poured it into a glass without a moment's pause when the water level had dropped. Fool, it will never come up again.
The taste is simply described as sake lees with soda. There is nothing special to mention, but it is delicious. Regardless of the logic or philosophy behind it, it is delicious, so there is nothing we can do about it.
Thinking about it calmly, I would drink it in a good mood if it was served as "active nigori," which is a mixture of clear sake, soda water and sake lees. We have a soda stream, so if I can get good sakekasu for free, I'll give it a try.

I can imagine how to add gas to nigori sake with soda stream 🤤, but it would be interesting to see how to add gas to clear sake with sake lees 😄.
Seems like it would be hard to get the smoothness of the tailings like commercial sake 🤔.

Good morning, Aladdin. I think you need to knead the sake lees well with a spatula. Actually, if you pour soda stream directly into clear sake, the exhaust valve will stick.
