Hinoya Junmai Ginjyo Nama Hashimoto Nama Genzake Limited Edition
Purchased at a sake shop on an old street in Hida Takayama.
I had a good impression of Hinoya when I tasted it at a Gifu Sake event.
It is the same brewery as the previous Tenryo, but Hinoya is a seasonal brand.
One of the 4-goupe bottles (3/10) that I brought back from my trip.
It is served cold.
The color is clear and transparent.
The top aroma is mild and not very noticeable.
The mouthfeel is thick and juicy.
The taste is fruity for a moment, then mildly sweet, with a hint of alcohol and bitterness coming out clearly in the middle.
A little bit of lactic acid taste and richness can be felt from the back.
The aftertaste is slightly acidic and refreshingly spicy. The bitter taste lingers in the aftertaste.
When I drank it at the event, I had an impression that it was very fruity and sweet, but maybe I was drunk 😅I felt surprisingly strong bitterness and spiciness.
