Kagishiki Yamahai Junmai Ginjo-shu has been handed down since the early Taisho era! Today, I left my car in Nanokaicho and went for a walk alone, visiting sake breweries, sake shops, and pottery shops. I went sightseeing and shopping in a leisurely manner. Of course, I stopped by Suehiro Sake Brewery. It is located in the city center and was quite crowded. The timing was not right for the sake brewery tour, so we gave it up! We enjoyed various tastings. I enjoyed myself to the fullest! It was a very hot summer day... The aroma is gorgeous and clean, with a lactic acid aroma, Smooth, slightly sweet, mild acidity and Smooth, slightly sweet, mild acidity and refreshing bitterness, Well-balanced umami, I thought I would like to drink it warmed up. I thought I might like to drink it warmed, and it was empty. It was quite dry, but not in a sake sense. This time, we compared different parts of horse sashimi! Suehiro Inherited Yamahai Junmai Souvenir of Aizu, Aizu Sake Drinking Comparison! Purchased at Suehiro Sake Brewery Kaei Kura, located just off the street in Nanoka-machi. Suehiro Sake Brewery Kaneigura was founded by Kinichiro Kagi, the founder of Yamahai sake brewing at the end of the Meiji era (1868-1912), who experimentally brewed it in the early Taisho era (1912-1926). Suehiro's Kagishiki Yamahai brewing has been handed down from generation to generation. A large brewery that suddenly appears in the middle of town, inside is beautiful and stylish with a café. The color is a clear, slightly bright golden yellow. It has a refreshing taste with a sourness that is typical of Yamahai. When warmed up, it has a soft sweetness and a well-balanced flavor. Today, I paired it with bamboo shoots and kogome, a springtime delicacy.
