Suehiro Inherited Yamahai Junmai
Souvenir of Aizu, Aizu Sake Drinking Comparison!
Purchased at Suehiro Sake Brewery Kaei Kura, located just off the street in Nanoka-machi.
Suehiro Sake Brewery Kaneigura was founded by Kinichiro Kagi, the founder of Yamahai sake brewing at the end of the Meiji era (1868-1912), who experimentally brewed it in the early Taisho era (1912-1926). Suehiro's Kagishiki Yamahai brewing has been handed down from generation to generation. A large brewery that suddenly appears in the middle of town, inside is beautiful and stylish with a café.
The color is a clear, slightly bright golden yellow.
It has a refreshing taste with a sourness that is typical of Yamahai.
When warmed up, it has a soft sweetness and a well-balanced flavor.
Today, I paired it with bamboo shoots and kogome, a springtime delicacy.
It's delicious.
