やす☆It has a fresh, crisp acidity and a lightly cloudy graininess. It is more gassy and has a deeper umami than the Omine we had just before, which we prefer.
It was my first time at this restaurant, but the liquor store seemed to use Sake Sento, Yoshidaya, and Chitashige, and had a good selection of modern sake. やす☆It has a sweet and juicy Muscat-like flavor. There is little oriki, and the graininess is subdued. Although it is a draft sake, the freshness is not so strong, and the overall impression is that of a thin line, which is typical of Omine. やす☆It has a once-fired petite freshness and a deep melon-like sweet and juicy taste.
