We started the sake season with a comparison of Banshu Issen Shippo!
Last year Jay & Nobby and many others, many of you are already drinking it this year too 😊.
We got it at Asano-san in Kyoto...

A nice sound.
When you drink it, it has a nice crispy taste. It tastes like rice and is slightly fruity. Strong bitterness with a clean finish!
The taste is still rough and hard. Still tastes rough and hard, but the new sake-like taste makes me happy.
After a while, it tasted like muscat, melon, and sweetness came out!
Looking forward to tomorrow!
Second day, muscat-like aroma.

On the third day, the aroma is melon-like.

Soft sweetness and tasty acidity. The bitterness is reduced and it's even easier to drink.
On the 4th day, the fruity flavor is still there, but the sweetness has decreased and the acidity has increased.
This is delicious!
I liked the fruity sweetness of the 3rd day the best: ❣️
This year, both orikarami and shingin rice are polished.
The rice is flattened and polished to a flat shape.
It seems to eliminate the cloying taste, and give a cleaner, more delicate taste.
