I've got a stock of Collage and I'm going to open it 😆.
I've had a lot of Collage, but this is my first time to drink it raw 😮.
The aroma is a clean banana-like ginjo aroma 🎶.
The flavor is very nice and juicy with a hint of gas and a slight spurt 😍.
The taste is banana🍌 + melon🍈? 🤔
The umami is strong and the bitterness is a bit strong.
Sweetness is also there but it's quite moderate due to the bitterness from the lees 🤔.
It is a very good sake with a good sharpness and not too flashy, so no matter how much you drink it, you will not get tired of drinking it 🍶.
It's fine on its own, but for me
I'd like to drink it with some food as a food wine 😍.
