＜Honey, sweet, sour, burnt, bitter, zun, 100 year old sake.
Hyakunen-kijoshu means that the sake to be added is the previous year's Hyakunen-kijoshu. In other words, the year before last's Hyakunen Kijoshu is also included in that sake, so if this is repeated for 100 years, you will have a Kijoshu that contains all the sake from the past 100 years. A lot of romance!
The color is slightly light amber.
The aroma is mainly honey sweet with a hint of ripe bitter acidity. The burnt taste, like slightly blackened toast, is conversely intriguing.
In the mouth, the rich honey sweetness and acidity is melt-in-your-mouth sweet! The burnt bitterness is also zhuzhun! I think there is some umami, but it is hidden behind the rich sweet and sour bitter taste.
The sweetness lingers in the aftertaste and disappears unexpectedly lightly. It is a very neat that it disappears without leaving a bad feeling even though it has such a strong claim.
If I were to use a Ghibli analogy, it would be the Grand Mamare from "Ponyo on the Cliff. Ponyo's mother, the Queen of the Sea. As her name suggests, she is a great mother. She is terrifyingly beautiful and powerful.
