National Sake Fair 2025 in Osaka ⑫⑫Ibaraki Prefecture Booth #2 Ibaraki Prefecture Booth (2) This brewery has inherited the skills of the Nanbu Toji, one of Japan's three great toji groups, and uses spring water from the same vein as the Omoido water of the Oho Shrine in the city for brewing sake. Aiyu Daiginjo Limited Edition Beautiful, full-bodied, sweet and fruity. This is my favorite. The president of Ehime's Hanaheizakura came to this booth to drink Urasato, and like the Shikoku sake event, he was dressed like Junrei. I wonder if Ehime Sake Brewers Association unifies Junrei-style uniforms at their events.

Aiyu Sake Brewery in Ushio City Yamada-Nishiki Polishing ratio 38% 16% Sake degree +3 Acidity 1.1 Amino acidity 0.5, M310 yeast, 4,840 yen with box. It is said to be undiluted sake. This sake won a trophy in the IWC Daiginjo category. It has a clean but gorgeous and beautiful taste! It had a rich taste for the high price. I forgot to take a picture, so I borrowed Nemuchi's picture!

The name "Sake" means "to love one's friends," and "to be kind to one's soul," and it was named after the spirit of drinking together. It has a rich plum aroma. However, there is no sourness in the flavor. It is easy to drink and has a crisp taste, but leaves a rich aftertaste. The yellowish color is very strong, and the legs are weak and not very noticeable.
