The dancyu project has produced a non-filtered, raw version of the 2019 d-liqueur, adjusted to 16.5 for use in hot weather, with an additional year and a half of maturation. Soft lactic dairy aromas, smooth lactic banana liqueur, and a smooth rice flavor with a hint of bitterness on the finish.

Shared by a fellow wine drinker. dancyu has created the 2019 Unfiltered Raw Chardonnay version, with an additional year and a half of maturation. Lactic dairy aroma, lactic banana liqueur, sweet and sour taste, with a rice flavor on the finish and a slight bitterness.

This is an unfiltered, raw version of d-liquor 2019 produced by Dancyu, because it is only available under the liqueur label. d-liquor is actually a blend of cedar wood chips soaked in a variety of liquors. The lactic acidity is mineral, banana exalts the lactic acidity, and the rice flavor floats to a woody finish.
