I bought it again this year, Nahami Shoten's Kyo ❣️
This sake is brewed in collaboration with Akita Prefectural University every year 🍶.
The sake is brewed according to the tastes of the students of that year, so it tastes different every year 😁.
The label design is also thought up by the students!
Last year, I was attracted by the simple label and bought it for the first time, but this year I was attracted by the flashy label lol 😆.
Last year it was like a white wine with a lot of acidity, but this year it's different, the acidity is weaker and more balanced 🎶.
It's made with both food and on its own in mind 😋.
I'm still a little uncomfortable with the cemedine feeling that is present in Naba 💦.

Project sake with students of prefectural university🍶.
The concept is to create easy-to-drink sake that young people can easily pick up and enjoy.
The students of the prefectural university are taking the lead in designing the sake quality, producing rice, developing yeast, brewing sake, and even designing the label.
They have been doing this for about 20 years now?
I'll have it for the first time (laughs).
I picked it up because I thought it was simple and tasteful, unlike the labels I've had in the past 🤣.

The aroma is clean and floral.
Not fruity.
A little cemedine-like, which is typical of Naba Shoten.
The dryness and acidity are so artisanal that you would think that they must be particularly serious and honest people. ❣️
